Salmon and Steamed Asparagus Spring Salad

This salad is great as a main course and will keep any guests you serve it to coming back for more. The ingredients list is just a guideline and this salad could be used with just about anything you find in your fridge or pantry.

The ingredients are:

¾ cup zucchini, diced
¾ cup cucumber, diced
½ cup yellow pepper, roasted and diced
1/3 cup sun-dried tomato, julienned
1 tablespoon capers
½ cup blanched and julienned snow peas
½ cup whole cilantro leaves
½ cup whole parsley leaves
5 asparagus spears, roasted and cut into ½” lengths
1 salmon fillet, roasted
¼ cup rice wine vinegar or lemon juice
1 teaspoon Dijon mustard
Salt and freshly ground pepper
1 minced shallot
Zest from ½ lemon
¾ cup extra-virgin olive oil

1. In a large bowl combine zucchini, yellow pepper, sun-dried tomato, capers, and snow peas.

2. Using a separate bowl, whisk together rice wine vinegar, mustard, salt, pepper, shallot and lemon zest. Slowly add in oil being sure to whisk constantly. Pour as much of this over the salad as you would like and toss well.

3. Gently flake the salmon and add to salad. Mix salad just enough to distribute salmon throughout. Over-mixing will cause the salmon to continually flake and this is not the desired effect.
