Double Chocolate Pudding

This is a wonderful dessert that only takes two minutes longer than preparing pudding from a box.

• ¾ cup granulated sugar
• 1/3 cup unsweetened cocoa powder
• 3 tablespoons cornstarch
• ¼ teaspoon salt
• 2 cups light cream
• 3 ounces semi-sweet or bittersweet chocolate
• 1 ½ teaspoons vanilla extract

1.) Place sugar, cornstarch, cocoa, and salt in a medium saucepan and whisk together. Slowly add one cup of cream and whisk until well blended. Add remaining cup of cream and whisk again until well blended. Cook the mixture over medium heat, continuing to whisk, about five minutes until it starts to boil and becomes thick. Continue to whisk for one minute.

2.) Remove from heat and add chocolate and vanilla. Let stand for five minutes and then slowly stir until smooth. Don’t stir too much or it will thin.

3.) Place the pudding in 8 small dishes. Allow to cool for 30 minutes to serve warm or let stand in refrigerator for thirty minutes to eight hours.
