Tapioca Apples

Ingredients:

6 cups pared apple slices 2/3 cup sugar3 tbsp. quick-cooking tapioca1/8 tsp. salt 1-1/2 cups water

Serves: 6

Method:

1. Mix sugar, tapioca, salt and water in a saucepan. Let is stand while you slice the apples. 2. Then, bring the tapioca mixture to a boil, stirring to prevent sticking. 3. Add apples. Boil gently, covered, till apples are tender for 10-15 minutes. Stir occasionally to prevent sticking. 4. Sprinkle with nutmeg and serve with plain or whipped cream, if desired.
