St. Patrick’s Day Theme Desserts

Whether you’re attending a St. Patrick’s Day party, hosting one, or simply want to make the day a little more festive at home, there are some Irish-ly delicious treats that are simple to make. These tasty desserts are not only fun to eat, they’re fun to make too!

Irish Flag Cookies

These delectable cookies are shaped like rectangles and decorated as Irish flags. Here is what you’ll need:

For the Cookies:

• 1 cup butter
• 1 ½ cups confectioners sugar
• 1 egg
• 1 teaspoon vanilla extract
• 2 ½ cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon cream of tartar

For the Frosting:

• 1 cup sifted confectioner’s sugar
• ¼ teaspoon salt
• ½ teaspoon vanilla extract
• 1 tablespoon water
• 2 drops orange food colouring
• 2 drops green food colouring

To Make the Cookies:

1.) In a large bowl beat together the butter and confectioner’s sugar. Add vanilla and egg and mix well.
2.) In a separate bowl, mix the flour, baking soda, and cream of tartar. Mix into the butter mixture. Split the dough into thirds and form into balls.
3.) Working with each separate ball of dough, roll out on a floured surface to ¼” thick. Using a knife, cut the dough into rectangle shapes, approximately two inches wide and three inches long.
4.) Place the cookies onto an ungreased baking sheet and bake at 350 degrees Fahrenheit for ten minutes, or until the tops just start to brown.
5.) Remove from oven and place on wire rack. Cool completely before frosting.

To Make the Frosting:

1.) Mix together the confectioner’s sugar, salt, and vanilla extract. Add just enough water until it becomes easy to spread.
2.) Divide the frosting equally into two different bowls and add orange food colouring to one batch and green food colouring to the other. Mix until the colours are evenly distributed.
3.) Taking the cookies, frost each left side with the green frosting with one inch of frosting. Frost each right side of the cookies with orange frosting, also with one inch of frosting. Leave the middle of the cookie unfrosted.

Irish Potatoes

Irish potatoes are a very popular dessert in Ireland. They are a great recipe to make with the kids because they are so easy to make. Oh, and they don’t involve potatoes of any kind.

• 1 cup confectioner’s sugar
• 1 cup shredded coconut
• 1 ½ tablespoons cream
• 2 tablespoons ground cinnamon

1.) Place the coconut in a bowl and sprinkle the sugar over it. Add the cream and mix it gently.
2.) Using approximately ½ tablespoon of dough at a time, roll it into balls.
3.) Roll the balls of dough in the cinnamon and enjoy!

Irish Bananas

This is a great cozy warm treat that is delicious and Irish all in one!

• ½ cup butter
• ½ cup brown sugar
• ½ cup Irish whiskey
• 4 large bananas, peeled and halved lengthwise

1.) Place a skillet over medium heat and put the butter in to melt. Once the butter has melted, stir in the brown sugar and whiskey. Allow mixture to boil and stir to dissolve all the sugar. Add the bananas and simmer until the bananas become glazed with the syrup. Remove and serve warm with vanilla ice cream.
