Leprechaun Gold Salad

What you will need:

1. Two packages of orange or lemon gelatin
2. Water
3. Round cookie cutter
4. Spatula
5. Cooking spray

Directions:

1. Pour 1 ¼ cups water in a saucepan.

2. Put the saucepan on a burner until the water boils.

3. Empty the gelatin packets into a bowl.

4. Pour the boiling water in with the gelatin and stir until the gelatin dissolves.

5. Pour the gelatin into a 9x13 glass dish.

6. Allow it to set in the fridge for approximately three hours.

7. When the gelatin is set, remove from the fridge and use the round cookie cutter to cut the "coins," out of the gelatin.

8. When you have made as many coins as you can, remove the excess gelatin and place in another bowl.

9. Spray a small amount of cooking spray on the spatula and spread it around with a paper towel.

10. Use the spatula to remove the coins. Arrange the coins on top of cottage cheese or whipped cream.
