Spring Salads
Perfect Pea Salad
Spring Salads
Serve this as a side to a light spring meal or have
it as a light lunch. Perfect anytime, and perfectly delicious too!
The ingredients you’ll need are:
1 package of frozen peas that has been thawed and
drained
½ cup red onion, diced
1 cup celery, diced
1 egg, hard boiled and diced
6 slices bacon, cooked crisp and chopped
¼ cup sour cream
¼ cup mayonnaise
1 cup cashews
1. Mix together peas, red onion, celery, egg, and
bacon. Season with salt and pepper.
2. Mix together the sour cream and mayonnaise and
add to other ingredients.
3. Cover and place in fridge for two hours. Just
before serving, add cashews.
