New Orleans Potatoes

Ingredients:

12 small New Potatoes
1 8oz. pkg. cream cheese (Neufchatel works great)
1 8oz. pkg. lowfat sour cream
1 stick butter
2 cups grated cheddar cheese
4-5 chopped green onion stalks
1 pkg. bacon - cooked crispy and crumbled
white, black & cayenne pepper (to taste)
salt (to taste)

Method:

Pre-heat oven to 350.

Peel & chop potatoes, boil in salted water until fork-tender. Drain well.

Begin mashing potatoes with electric mixer on Low, adding cream cheese, sour cream and butter. Mix until creamy. (a few lumps are okay)

Stir in 1 1/2 cups of the cheddar cheese, crumbled bacon & green onion.

Add white, black & cayenne pepper and salt to taste.

Spoon into a buttered 13 x 9 baking dish, sprinkle top with remaining cheddar cheese and dust with cayenne pepper. Bake at 350 degrees 20 minutes or until cheese is melted & bubbling.

Let sit for 5 to 10 minutes, serve and wait for the compliments! This is the best pot-luck or holiday dish EVER!
