Mini Pizzas

Cooking Time : 30 minutes. Preparation Time : 30 minutes. Makes 16 small pieces.For the dough 200 grams whole wheat flour 10 grams fresh yeast 3/4 teaspoon salt 3/4 teaspoon sugar 1 teaspoon oil For the sauce 400 grams tomatoes 2 small onions, chopped 3 to 4 cloves crushed garlic 1/2 teaspoon chilli powder 1 teaspoon sugar 1/2 teaspoon oregano 1 teaspoon oil salt to taste

For the topping 2 capsicums, cut into rings 4 onions, cut into rings 2 tomatoes, cut into slices 75 grams mozzarella cheeseFor the dough

1. Sieve the flour with the salt and sugar. Add the oil and mix well. 2. Make a well in the centre and crumble the yeast in the centre. 3. Sprinkle 1/2 teacup of warm water over the yeast. Wait for a few minutes. 4. Mix the yeast in the flour and add enough water to make a dough. 5. Cover the dough with a wet cloth to “prove”. Leave for 30 minutes or until it is double in size. 6. Knead the dough for 1 minute. 7. Divide the dough into 16 parts. 8. Roll out each part to 75 to 100 mm. diameter rounds. 9. Prick lightly with a fork. 10. Brush a baking tray lightly with oil and arrange the rounds on the tray. Keep aside for 15 minutes. 11. Bake in a hot oven at 200 degree C for 15 minutes.

For the sauce

1. Chop the tomatoes and drain. 2. Heat the oil, add the onions and garlic and fry for 3 minutes. 3. Add the tomatoes, chilli powder, sugar and salt and boil for 10 minutes. 4. Blend the mixture in a liquidizer. 5. Add the oregano.

How to proceed

1. When you want to serve, spread some sauce on top of each pizza. 2. Arrange the capsicum and onion rings and tomato slices on top. 3. Sprinkle mozzarella cheese on top. If you like, use a mixture of mozzarella and cream. 4. Bake in a hot oven at 200 degree C for 5 to 10 minutes. 5. Cut into pieces and serve hot.Handy tip(s): 1. Health Information : 2.
