Irish Buttermilk Bannock, St. Patrick’s Day Recipes

This is wonderful bread that can be served as a side dish, dessert, or for breakfast. The ingredients are:

What you will need:

• 4 cups of all-purpose flour • 3 teaspoons of baking powder • 1 teaspoon of salt • ¾ teaspoon of baking soda • 1 cup raisins • Two eggs • 1 ½ cups buttermilk • Flour for sprinkling

Directions:

1. Preheat the oven to 350 degrees Fahrenheit. Prepare a casserole pan with shortening, or spray it with non-stick spray. Sprinkle some of the additional flour onto a cutting board or countertop.

2. In a large bowl, combine the flour, baking powder, salt, baking soda, and raisins.

3. In a separate bowl, whisk the eggs and the buttermilk together. Then add them to the dry ingredients. Mix the batter until all ingredients are thoroughly incorporated.

4. Place the batter onto the floured surface and knead it until smooth. When kneading is finished, form the batter into a ball.

5. Place the ball of batter into a casserole pan. If desired, a cross can be cut into the centre of the dough using a sharp knife. Put in preheated oven and bake for 75 minutes, or until a fork inserted in the centre comes out clean.

6. When the bread is finished, allow it to cool for 15 minutes inside the casserole pan. It should then be placed on a wire rack to cool completely.
