Wholemeal Banana Muffins

These muffins are great for those on cholesterol lowering diets.

Makes 8

Ingredients:

butter for greasing (optional)
50g raisins
grated rind and juice of 1orange
125g wholemeal flour
75g wheat germ
3 level tbsp caster sugar
7 level tsp baking powder
pinch of salt
1 large egg beaten
50ml milk
50ml sunflower oil
7 medium sized ripe bananas (about 275g when peeled) roughly mashed

For the topping:

5 level tbsp orange marmalade
50g banana chips
50g roughly chopped walnuts

Directions:

Line 8 muffin tins with paper muffin cases or grease the tiny well.
Place the raisins in a bowl pour the orange juice over and leave to soak for 1hour or overnight.
Place the orange rind in a bowl with the next flue ingredients and mix together. Make a well in the centre.
In a separate bowl mix the egg milk and oil then pour into the flour mixture.
Drain the raisins reserving 1 tbsp juice and stir into the mixture with the bananas.
Don't over mix.
Fill each muffin case two thirds full.
Bake on the bottom runners of the roasting oven for 15 to 20 minutes or until a skewer inserted into the centre comes out clean.
Transfer the muffins to a wire rack to cool slightly.
While the muffins are baking prepare the topping.
Gently heat the orange marmalade with the reserved orange juice in a saucepan on the simmering plate until melted.
Simmer for 1 minute then add the banana chips and chopped walnuts.
Spoon on top of the muffins.
Serve while still warm.
