Garlic Cream Potatoes
Serves 4
Ingredients:
900g potatoes
2 fat garlic cloves crushed
300ml double cream
salt and freshly ground black pepper
Method:
Well butter a 1.8 litre shallow ovenproof dish.
Slice the potatoes into slices about the thickness of 2 x 10p
coins.
Arrange half the potatoes over the bottom of the dish and season
well with salt and pepper.
Crush the garlic into the carton of cream stir well then pour half
over the potatoes in the dish.
Cover with the remaining slices of potato. Season with salt and
pepper and pour over the remaining cream.
Cover with foil.
With grid shelf on the second set of runners cook in the roasting
oven for about 1 hour 10 minutes removing the foil after 30
minutes.
The top should be just beginning to brown. Ideally serve straight
away or they can be kept warm safely in the simmering oven for
about 30 minutes or so.
