Cornish Hens Christmas Dinner
Potted Crab
Serves 4
Ingredients:
75g butter
250g freshly boiled crab meat (white and brown)
1/2 tsp ground mace
juice of 1/2 a lemon
Directions:
Melt the butter in a saucepan over a low heat then add the crab
and mace.
Add the lemon juice then stirring occasionally heat gently for 8
to 10 minutes.
Check the seasoning and add salt and pepper accordingly.
Either serve warm or pour into 4 ramekins and chill until set.
Serve with either toast or soda broad.
