Cornish Hens Christmas Dinner
Grated Carrot Christmas Pudding
Serves 4
Ingredients:
For Pickled Beets
1 pt. white vinegar
1 c. water
2 c. sugar
1/2 box pickling spice
3 lb. red beets
Dressing:
2 tablespoons orange juice
2 tablespoons cider vinegar
2 tablespoons olive oil
1/4 teaspoon seasoned salt
1/8 teaspoon dill weed
Directions:
For making pickled beets:
In saucepan, cook beets in water until tender. Drain. Pour cold
water over beets and skin them by rubbing between your hands. Cut
off ends. Slice beets. Dissolve sugar and salt into the 2 cups
water and vinegar. Pour syrup and pickling spice onto beets.
These keep in the refrigerator for months.
For the Salad:
Mix all ingredients of dressing. Shake well and pour on the
beets.
