Fall Vegetables Recipes
California Carrots
Ingredients:
8 medium carrots--scraped; sliced or diced
1 tsp salt
1 small onion, minced
1/2 glove of garlic
1 Tbsp of butter
1 Tbsp all purpose flour
1/2 c of consommé
1/2 c sauterne wine (cooking)
salt/pepper to taste
Method:
Parboil carrots. Drain. Fry onion and garlic glove
in butter. When yellow, remove the garlic and discard. Add onion
and butter to the flour. Mix well. Add consommé and wine. Season to
taste. Add carrots and let simmer until tender. Add a little
consommé if sauce becomes too thick.
