Blueberry Supreme Pie
Ingredients:
1 (8 oz.) box vanilla wafers
1 1/2 cups sifted powdered sugar
3/4 cup butter
2 eggs
1 (16 oz.) can blueberry pie filling
1 cup whipped cream
1/2 cup chopped pecans
Method:
Crush 1 box of vanilla wafers. Spread 1/2 in bottom
of 9\" square pan or one 8\"x10-inch pan. Cream sifted powdered
sugar with butter. Add 2 eggs, one at a time and beat well. Spread
egg mixture over vanilla wafers. Cover with blueberry pie filling.
Spread whipped cream over blueberries. Sprinkle with 1/2 cup
chopped pecans. Top with remaining wafer crumbs. Refrigerate for 24
hours.
Serves 9 --------------
